Cajun Chicken & Sundried Tomato Lasagne
Of course we have to make something that’s different. This is one of the original recipes June Budgen (Founder of Posh Foods) developed. One day when she was cooking in the kitchen back in Erskineville, she had some Cajun Chicken leftover and some lasagne sheets. She thought it might be a good idea to combine this to form a new dish. With her experience in combining flavours for the perfect balance in flavours, she added some sundried tomatoes, some fresh rockets and caramelised onion.
This lasagne has the perfect balance of the Spiciness (Cajun Spice), Sourness (Sundried Tomatos), Sweetness (Caramelised Onions), Fresh Peppery Bitterness (Rockets) and Milkiness (Homemade Bechamel Sauce).
